Sloppy Joes (A Seat at the Table)

Sloppy Joes are an American classic, but this recipe includes a small change.  Instead of just using ground beef, I’ve added cooked lentils to cut calories and costs.  The lentils aren’t noticeable since they have a similar texture to the ground beef, but add great protein and fiber, to help you fill up.  If you’re feeling even more adventurous, I think you could easily add more peppers, or even some finely chopped mushrooms to increase your vegetable count.  I love this idea of decreasing meat consumption while still maintaining the flavor and texture of a classic.

I served this with a Marinated Celery Slaw instead of a more traditional cabbage slaw.  This is a great summer dish when it’s too hot outside for grilling, but you still want that great American BBQ feel.  Just serve with watermelon, and a seed spitting contest.

Sloppy Joes

Makes about 8 sandwiches

Adapted from Budget Bytes

  • 1 Tbsp olive oil
  • 1 sweet onion, diced
  • 1 large green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 lb extra lean ground beef
  • 1 1/2 cups pre-cooked brown or green lentils (I used Trader Joe’s pre-cooked)
  • 1 (15oz) can tomato sauce
  • 1/2 can (3 oz) tomato paste
  • 3 Tbsp cider vinegar
  • 3 Tbsp brown sugar
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 8 hamburger buns for serving

In a large skillet, heat olive oil over medium-high heat.  Add the diced onion and sauté until just beginning to soften.  Add the green pepper and garlic, sautéing until tender.  Add the ground beef, breaking it up as it cooks.  Once the meat is cooked through add the cooked lentils.  Stir in the tomato sauce, paste, vinegar, sugar, mustard, salt, and chili powder.  Let simmer for a few minutes to allow the sauce to thicken.  Taste and adjust seasoning as needed.  Serve on toasted hamburger buns.
