It’s always great to find another use for a waffle iron, and these savory waffles are fantastic! I made these for brunch this past weekend, and while my friends were dubious about savory waffles, they were convinced by these. They’re crispy on the outside, tender on the inside, with salty cheese and bright scallions throughout. These are perfect for sandwiches, snacks, or paired with eggs. I also got to use some scallions from my CSA. I hope you’ll give savory waffles a try!
Savory Cheddar Scallion Waffles
Makes about 24 waffles
Adapted from Joy the Baker
- 1/4 cup flaxseed meal
- 3 cups all-purpose flour
- 4 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 2 Tbsp granulated sugar
- 2 1/2 cups skim milk
- 1 Tbsp white vinegar
- 2/3 cup melted butter
- 4 large eggs
- 1 cup grated sharp cheddar cheese
- 1/2 cup scallions, sliced
In a bowl, whisk together flaxseed meal, flour, baking powder, baking soda, salt, pepper, and sugar.
In a separate bowl, combine milk and vinegar, let sit for about 5 minutes. Whisk butter and eggs into the milk until well mixed. Add wet ingredients to the dry and stir until just combined. Fold in the cheese and scallions.
Heat your waffle iron to medium-high (or the waffle setting) and grease with cooking spray. Once hot, scoop batter onto the iron and cook until golden brown. Serve immediately or allow to cool completely, and then wrap in foil and freeze.
